This is the illustration of my mum's amazing elderflower syrup.
Ingredients: * 20-25 elderflower umbels * 2kg sugar * 3 litre water * 80g citric acid * a few lemon slices.
1. Put 2 kg sugar and 3 litres water into a large saucepan. Gently heat, without boiling until the sugar has dissolved. Once the sugar has dissolved, turn off the heat and let it cool. 2. Now add 20-25 flowers to the syrup along with a few lemonslices and 80g citric acid. 3. Cover the pan and leave to infuse for 2 days. 4. After two days your syrup is ready to be filled into sterilised bottles.
